About
On Place du Marché in Préfailles, 150 metres from the Grande Plage, Le Saint Paul is a family affair. A local, chef Maxime Roullier took over his parents’ brasserie after working at Éric Guérin’s La Mare aux Oiseaux, in the Brière, and at Le V in Paris. His wife Johanna welcomes guests. The cooking is homemade, from fresh seasonal produce, and is included in the MICHELIN Guide selection. The plates change with the market: the guide mentions a pea tartlet with burrata espuma, or pork belly confit for forty-eight hours; the house also shows pollack and a Valrhona chocolate tartlet. The south-facing covered terrace looks out to sea; the cosier dining room takes over when it is cool. The atmosphere stays friendly and family-like, a few steps from the coastal path to the Pointe Saint-Gildas.
