About
In La Baule, Guillaume Brisard combines a market menu, an intimate chef’s table dinner and cooking classes in a house entirely devoted to produce. Guillaume Brisard puts his experience into cooking that is accessible in spirit and ambitious in execution. For him, explaining a product, showing a technique and sharing a pairing are all part of cooking. At lunch, the Menu du Marché lets the produce guide a starter, main and dessert, with a reference price published at €35. In the evening, the Table du Chef in six courses is a more intimate experience: amuse-bouche, starter, fish, meat, cheese and dessert, adapted to the produce and to any restrictions, listed at €125. On Sundays, oysters and shellfish from the Mesquer oyster beds star in a session devoted to seafood. Cooking classes range from a hands-on session to a programme combining a market visit, cooking and a meal; the Journée Chef offers enthusiasts a whole day alongside the chef. The house is on avenue Louis-Lajarrige, a part of La Baule with its own rhythm between shops and the seafront, so lunch combines easily with a walk on the great beach.
