About

In La Gacilly, Anthony Le Fur gives pride of place to vegetables, herbs, flowers and nearby growers in organic, locavore cooking. Les Jardins Sauvages is at one with the vegetable garden and landscapes of the La Grée des Landes eco-hotel, in a bright restaurant open to nature. Les Jardins Sauvages is not among the shops of La Gacilly, but on the La Grée des Landes estate, in Cournon. The glass architecture, the gardens and the landscape are at the heart of the experience. It is distinct from the Végétarium, the group’s other restaurant in the village, whose menu and culinary spirit are different. A local, Anthony Le Fur develops contemporary cooking rooted in market gardeners, foraging and nearby craftspeople. Fruit, vegetables and herbs guide the design of the plates, with generous flavours and textures and jus worked for depth. Supply is largely organic, except for fish and seafood, which carry no organic label. The adjoining vegetable garden is not just decorative: some herbs and varieties at their peak shape the menu, right down to the flowers and leaves available at the right moment. A walk in the gardens before lunch helps you understand the link between the landscape and the plate.
