About
In Cancale, above the Breizh Café crêperie, Raphaël-Fumio Kudaka offers one-star French-Japanese cuisine. Breton fish, vegetables and buckwheat meet Japanese broths, seasoning and precision, facing the bay. La Table Breizh Café does more than add a few Japanese ingredients to Breton fish. Chef Raphaël-Fumio Kudaka has developed a gastronomic language in which the two traditions understand each other. The Cancale coast provides fish, shellfish, seaweed and vegetables; Japanese cooking brings techniques, broths and a science of seasoning. The result is precise dishes, usually more subtle than showy. The chef works on cooking, fine cutting and the aromatic depth of each preparation. The apparent lightness can hide a great deal of work on broths and textures. Taste the sauces, the fermented or marine elements and the vegetable garnishes carefully: their role is often decisive. Buckwheat is central to the Breizh Café world. At La Table, it meets Japanese references, down to soba noodles and dishes that bring out its toasted notes. This common thread also tells the story of Bertrand Larcher, founder of Breizh Café: a gastronomic translation of buckwheat, very different from the galettes served downstairs. Local seafood is showcased with great precision. Monkfish, langoustines, oysters, bonito and seaweed have inspired various creations, but these are examples, not promises: the dishes change with the catch and the menus. Ask which products are featured on the day. La Table occupies a floor above the crêperie, with a view of the harbour and the bay. The atmosphere is more intimate, designed for a gastronomic tasting. To avoid mistakes, book La Table Breizh Café specifically, not just Breizh Café Cancale: menus, timing, prices and bookings are completely different from the crêpe and galette menu. The meeting of Breton and Japanese influences invites you to look at drinks and pairings; ask about an alcohol-free option when booking. La Table fits perfectly into a day in Cancale: walks around La Houle, the oyster beds and an outing to the Pointe du Grouin. After dinner, check transport or plan accommodation nearby.
