About

At Iodé, 9 rue Aristide-Briand in Vannes, Brittany is not just a fish on the plate. Sophie Reigner, who runs the kitchen, and Julien Noray, the pastry chef, seek to recapture the scent of sea spray, the saltiness of the shore and the smells of a walk over the rocks. Their philosophy, which they describe as a way of “drinking the sea”, gives the tasting a unique, almost narrative dimension. Fresh or infused seaweed, shore plants, contrasting textures and precisely judged condiments form a common thread. The produce stays at the centre, but the chefs like to work on sensations even before the first bite. Desserts are fully part of the journey: pastry does not simply close the meal, it carries on its contrasts. The house offers several formats, and this matters: its evening gastronomic experience is not the same as Les Embruns, the bistro menu served at weekday lunchtimes. A gastronomic brunch is also offered on Saturday lunchtimes. Book the right format to really enjoy what the duo wants to share.

  • Julien Noray, trained in food physical chemistry before turning to pastry, brings a different eye to textures and balance.
