About
In the Saint-Patern district of Vannes, Inspirations lives up to its plural name. Alexandre Juton lets his cooking dialogue with Breton produce, French tradition and ideas gathered during his career in fine houses. With Élise, who looks after the welcome and the dining room, he has designed a place where gastronomy can be demanding without becoming formal. The chef’s signature shows in unexpected pairings: seafood with a koji-scented sauce, a vegetable with a precise acidity, or outside inspirations waking up a regional classic. The menu follows the calendar and is renewed every six to eight weeks or so. The décor matters just as much: the chef’s sketches, warm materials and furniture designed for the restaurant make up a polished dining room. Come for a lunch for two, a celebration or to discover the work of a duo who have made Vannes their creative ground since November 2023.
