About
In Vannes, Ryoko makes Japanese-inspired ramen with long-simmered broths, fresh noodles and short-supply-chain Breton produce, at a counter that takes no bookings. Ryoko is in the Saint-Patern quarter, on rue de la Fontaine, close to some of Vannes’ historic houses. The project comes from the team behind the restaurant La Tête en l’Air, but it has its own identity and prices. Each bowl rests on five elements: broth, tare, fresh noodles, aromatic oil and toppings. A tonkotsu pork broth and a clear chicken broth are among the bases presented publicly. Okonomiyaki with Breton bonito and shiitake mushrooms from the Auray area illustrate the blend of Japan and Brittany. The restaurant clearly states that it takes no bookings: arrive early or be ready to wait. Takeaway is also available, under the conditions displayed by the restaurant.
