About
Maison Vermer took over from Le Coude à Coude, a well-known Saint-Malo address. The current team has kept a welcoming spirit while asserting a contemporary line of cooking. The restaurant is on Boulevard de Rochebonne, in the Paramé area near the beach, far from the lanes of Intra-Muros, which gives the meal a seaside neighbourhood feel. Quentin Durand built his career in several top-level kitchens before settling in Saint-Malo, while Sophie brings her experience of service and hospitality. The house explicitly brings together vegetables and the sea, giving a large place to fish, shellfish, vegetables and herbs depending on the season. The name Vermer is a reminder: green (vert) for vegetables, sea (mer) for seafood. The lunch set menus offer a shorter, more relaxed way to discover the house. Dinner takes on a more gastronomic dimension, with a progression over several courses; the lunch menu is not served in the evening.
