About
Perched above the water in Dinard, La Vallée combines a spectacular view, shellfish, fish and local produce. Chef William Baslé celebrates the fruits of the tides, while the south-facing terrace looks over the Bec de la Vallée slipway. La Vallée’s location is one of the most memorable experiences in Dinard. Set into the rock, the restaurant overlooks the Bec de la Vallée slipway and looks out over the bay in ever-changing light. Large bay windows bring the landscape into the dining room, and the south-facing terrace offers an even closer link with the sea when conditions allow. William Baslé describes his cooking as instinctive, attentive to the season and the origin of the produce. Fish, shellfish, vegetables and sauces make up a clear menu where the sea comes first. Oyster farmers, fishermen and market gardeners supply the kitchen, and a sole meunière or a seafood platter can illustrate the spirit of some menus, depending on the catch. Sommelier Cédric Maupoint builds pairings around the minerality of the wines, the freshness of the seafood and guests’ tastes, and likes to showcase lesser-known estates. After the meal, you can follow the Promenade du Clair de Lune, head to the beaches or admire Dinard’s seaside villas.
