About
In the heart of Vannes, Maxime Brullé and Claire Baudais run a tiny bistro with generous cooking and a warm welcome. The restaurant explains its name through its founders: Claire for “BO” and Maxime for “MA”. Maxime cooks, Claire looks after the guests. The chef never sacrifices pleasure to fashion: published dishes show a taste for jus, generous purées and seasonal garnishes, with contemporary touches. The short menu, based on fresh seasonal produce, is renewed often, and a lunch menu offers a quicker way to discover his style during a day in Vannes. The dining room mixes old stone, metal, glass and modern lighting for an intimate atmosphere, slightly away from the bustle of the centre. Boma does not accept pets. Opening days vary, with Thursday evening only on the schedule consulted.
