About
Arnaud Tavares opened Nomad on Rue Émile-Burgault in May 2024 with a clear aim: to make flavours travel without giving up well-chosen produce. The style is freer than cooking tied to a single region, with bold aromatic notes, contrasting sauces and pairings drawn from experiences elsewhere. The board changes with the harvests and the catch: a meat, fish or vegetable may not keep the same side from one week to the next. The chef champions sustainable production and quality ingredients, and his care over sauces gives coherence to varied influences. From Tuesday to Friday lunchtime, Nomad offers a board with a two- or three-course set menu, a good way to discover the chef’s personality without a long gastronomic meal. On Saturday lunchtime, the board offers a different, more structured set menu, and the evenings are devoted to tasting menus.
